High Protein Plant-Based Mac n Cheese


1 box chickpea pasta

1 pack miyokoscreamery cheddar cheese

2 cups non-dairy milk

1 tsp ground mustard

1 tsp garlic powder

3 tbsp nutritional yeast

1 bag spinach

Salt and pepper to taste

Red pepper flakes (optional)


Cook pasta less time than the instructions on the box (we will bake this so you don’t wanna overcook your pasta). In a saucepan, add non-dairy milk and cheddar cheese. Let the cheese melt and allow the sauce to thicken. Then add garlic powder, ground mustard, and nutritional yeast. Add salt and pepper to taste. In a baking tray, combine cooked pasta, cheese sauce, and spinach. Bake at 375 for about 20 minutes or until burnt as you fancy. Serve and enjoy. I added red pepper flakes for some spiciness.
