Grounding Kitchari


1 cup mung dal (or red lentils)

1/2 cup white rice

1 tsp cumin

1 tsp fennel seeds

1 tsp turmeric

1 tsp black pepper

1 tap ginger powder

2 tbsp coconut oil

5 cups water

Salt to taste

1 pack spinach (or your choice of greens)


In a pan, melt coconut oil. Add all the spices and sauté for a couple seconds till it is fragrant (about 30 secs). Then add lentils, rice, and water. Bring it to a boil and let it simmer for about 40 mins. Add more water if needed. Cook until the rice and lentils are completely soft. Once cooked, turn off the heat and add in the entire bag of spinach. Serve and enjoy this healing dish.
